When you think of Calgary Stampede food, towering burgers, deep-fried treats and colourful Midway creations probably come to mind.
Caviar? Maybe not.
But tucked away on the top floor of the BMO Centre, the Stampede Cellar Champion Wine Experience is inviting guests to discover one of the world's most exclusive delicacies — and for about the same price as lunch on the Midway.
For just $15, visitors can try a "caviar bump," a single taste of Canada's own wild sturgeon caviar that might just change everything you thought you knew about the luxurious ingredient.
"It doesn't have to be a fancy, white-tablecloth experience," says Eric Giesbrecht, who has spent nearly two decades introducing Canadians to caviar. "I'll eat it with potato chips. I'll take it to the movie theatre. Fifty grams can go a long way."
That's exactly the philosophy behind the Stampede Cellar Champion Wine Experience this year: making extraordinary food approachable.
The caviar comes from Acadian Sturgeon and Caviar in New Brunswick, whose founder originally came to Canada to study sturgeon biology before building a sustainable business around one of the country's oldest fish species. Today, the producer offers what Giesbrecht describes as the only wild-caught sturgeon caviar in the world, harvested under carefully managed conservation practices while also raising farmed fish to help support the species' future.
Even for people who've tried caviar before, Giesbrecht says this is something entirely different. Rather than the buttery, one-note flavour many people associate with farmed caviar, he describes the wild Canadian variety as layered and complex, developing rich nutty and sweet notes that reflect the sturgeon's natural diet.
"It's like having caviar all over again," he says.
Of course, caviar is only one reason to visit the Stampede Cellar Champion Wine Experience.
Located in the Champions Ballroom on the top floor of the BMO Centre, the elegant space pairs award-winning wines from the Stampede Cellar Showdown International Wine Competition with an elevated menu designed for sharing. Guests can enjoy fresh oysters, seafood, charcuterie, whipped cheeses and carefully selected wines while soaking in live entertainment from returning favourites Piano Kings, plus aerial performers throughout the day.
Whether you're planning a leisurely afternoon or looking for a relaxing break from the excitement outside, there's an option for everyone.
Reservations are recommended for the seated dining experience in Champions Ballroom A, which has been filling quickly, but walk-in guests are also welcome. Champions Ballroom B offers a more casual lounge where visitors can enjoy a glass of wine and lighter bites without a reservation.
For those who have always wondered what the fuss is about when it comes to caviar, this might be the perfect opportunity.
